The typical Argentine dishes have a great influence from Europe, especially from Spanish and Italian gastronomy. The meats, especially the beef, are of great quality, hence one of the favorite recipes is the rolled veal slaughter.

  • 1.5 kg of matambre / veal skirt
  • 1 liter of milk
  • 1 clove garlic
  • Thyme
  • Laurel
  • 8 eggs
  • 200 gr of bacon
  • 1 or 2 carrots
  • Parsley
  • Pitted olives
  • Coarse or fine salt

1. Degrease the matambre well and spread it in a bowl with the milk, minced garlic, thyme, bay leaves and a little salt. Put it in the refrigerator to rest overnight.

2. The next day take out the meat and spread it on a baking sheet. Meanwhile, cook the eggs and peel the carrot. Then chop the ingredients for the filling.

3. Add the ingredients to the slaughterhouse and add a little salt, the minced garlic and the parsley. Place the bacon slices on the ingredients and roll up the slaughterhouse. Sew the edges with thread so that the filling does not come out.

4. Boil with water and salt for two hours. When done, take it out and put a weighted board on top to press it.

5. Once pressed, remove the cloth and threads and serve cold and sliced.
